Christmas Cookie Recipe of the Day: Buckeyes

Buckeyes!

Ingredients
  • 2 c. peanut butter (creamy, or smoooooth)
  • 1.5 lb. powdered sugar (5 c.)
  • 1/2 lb. butter, softened
  • 1/2 tsp. vanilla
  • semi-sweet chocolate chips
Directions

Cream together peanut butter & butter.  Gradually add powdered sugar.  When the mix starts to stiffen slightly, add vanilla (don’t wait till the end).

Roll dough by teaspoonful into small balls.  Chill buckeye balls in freezer on cookie sheets with wax paper until hard.

Melt chocolate chips.  Once the buckeye balls are frozen, dip the frozen buckeye balls into melted chocolate, using a toothpick or similar tool.  Set on wax paper and then store in a chilled place (the fridge works!)
