first home-cooked meal

Tonight, Laura and I made our first home-cooked meal in the new apartment. We made cod with a tomato and thyme sauce, quinoa, and spinach. Delicious!
For the cod:
Heat pan (md-h) with grapeseed oil
Salt and pepper cod and sear about 4 minutes each side
add thyme and the juice of half a lemon
baste the fish with this sauce and remove from pan to serving platter.
return pan to heat and add olive oil, quartered tomatoes (heirloom are probably the tastiest for this), garlic, and the juice of the other half of the lemon
cook about two minutes and then add freshly chopped parsley.
Serve!

    Beautiful dinner Liz!!! Does Laura like to cook too? How is it having a full kitchen with lots of counter space??? 🙂 Will you post a picture or two of your new place?

    Yes Laura likes to cook too. the counter space, regular sized stove, and amazing dishwasher really make cooking a lot more pleasant than in the apt on 17th. Pics of the apt to come once the place is all set up! (two weeks til we have all furniture)
